Vegan Cuisine: Origins, Veganism Philosophy, and Its Role in Modern Foodservice

In recent years when it comes to vegan cuisine and veganism in general there is a tendency to make a speech of a dichotomous nature, in which one feels almost obliged to be pro or against. Once you have chosen the "faction" in which to take sides, then, often tend to denigrate the counterparty, not even the absolute evil. This distorted vision pollutes the minds of both schools of thought, without any distinction. In these lines we try to clarify the concept of veganism and some false myths that feeds.

Veganism is above all a lifestyle, in which those who adhere have as their cardinal principle to not cause any suffering to animals. The substantial difference between vegetarians and vegans is that the former "limit" not to eat meat or fish, while the latter also avoid foods that derive from animals (eggs, dairy products, etc.), as well as avoiding fur and products tested on animals The vegan diet is rich in cereals, legumes, fruit and vegetables, all foods that, if well balanced, can give enormous benefits to the human body.

In reality, the detractors of veganism are convinced that a diet without animal meat can be dangerous for health, because it is unable to provide the body with the right contribution of proteins. Nothing more false: first of all, to date there are no scientific basis in order to demonstrate that a vegan diet can be dangerous for health. On the other hand, it is scientifically proven that excessive consumption of red meat can increase the risk of tumor pathologies and cardiovascular disorders. Not to mention that the proteins necessary for the human body, usually taken through the consumption of meat, can also come from foods such as cereals, legumes, nuts and peanuts.

Different speech for what concerns children. Subscribing to a vegan regime is not said to be harmful, but not even greeting. To date, studies on the subject by agreeing on the fact that the Mediterranean diet (rich in plants but with some animal foods) is the best for individuals in the growth phase.

Another myth to dispel is that it is mandatory to take meat to be able to practice sports at high levels. The list of athletes who have embraced veganism is very vast: from the sisters Venus and Serena Williams to Carl Lewis, passing through Mirco Bergamasco, there are many sports champions who won while depriving themselves of the meat.
