Negative refrigerated counters (-18 ° to -25 ° C)

Professional negative-temperature refrigerated counters, also known as commercial freezer counters or undercounter freezer worktables, are designed to store frozen food beneath a work surface. Ideal for restaurants, hotels, pizzerias, pastry shops, ice cream shops, delicatessens, canteens and commercial kitchens, they keep frozen ingredients, frozen products and prepared food conveniently located near workstations. Their horizontal configuration combines freezer storage with an accessible worktop.

Stainless steel commercial freezer counters are available in different capacities and configurations, featuring multiple doors, freezer drawers, internal shelving, worktops, insulated compartments and electronic temperature controls, depending on the model. Many frozen storage units operate at approximately -18°C, although actual operating ranges must be checked. Certain versions include fan-assisted refrigeration, automatic defrosting, magnetic seals, temperature alarms and supports for Gastronorm containers. Shelves and drawers must be compatible with freezer operating conditions.

When choosing a commercial freezer counter for a professional kitchen, consider temperature range, net storage capacity in litres, number of doors or drawers, dimensions, climate class, energy consumption and electrical supply. Door opening frequency, defrosting arrangements, ventilation clearance and cleaning access should also be assessed. Freezer counters are primarily intended for storing products already frozen and should not be confused with blast freezers. Storage conditions must meet food requirements and HACCP-based procedures.
