Refrigerated pastry counters

Professional refrigerated pastry counters combine a work surface with chilled storage designed for pastry ingredients and preparations. Ideal for pastry shops, commercial bakeries, dessert production facilities, hotels, restaurants, ice cream shops and catering businesses, they provide convenient access to pastry creams, fillings, cake bases, semi-finished products, ingredients and dessert preparations compatible with the operating temperature. The undercounter compartments support efficient use of pastry production space.

Commercial refrigerated pastry worktables are available in different lengths and configurations, featuring single or multiple doors, refrigerated drawers, stainless steel worktops, shelves and runners for pastry trays, depending on the model. Certain versions accommodate 600 x 400 mm bakery trays, while others use different formats. Features may include fan-assisted refrigeration, electronic temperature controls, automatic defrosting, rear upstands and specialised worktops. Operating temperature, storage volume and internal dimensions must be confirmed from the technical specifications.

When choosing a professional refrigerated pastry counter, consider tray size and quantity, storage temperature, usable capacity, door configuration, length, depth, height and climate class. Tray runner arrangement, container compatibility, cleaning access and ventilation space should also be assessed. Equipment selection must reflect the storage requirements of creams, dough and prepared pastry components. Refrigerated pastry counters primarily maintain temperature and do not replace blast chillers for rapidly cooling newly prepared products.
