MAIN FEATURES
The CTC2 heated drawer cabinet provides a compact hot-holding reserve between cooking, short holding periods and plating. It keeps already-hot preparations available and helps coordinate production and dispatch, supporting a steadier service as order volumes change.
The thermostat is adjustable from 40 to 80 °C, allowing the temperature to be adapted to the preparation and service requirements. The water tray provides air humidification during hot holding.
The two drawers open separately, providing direct access to the required preparation. The two removable GN 1/1 pans, 100 mm deep, simplify loading, serving and cleaning and allow different preparations to be organised in separate compartments.
The vertical design combines two holding levels within a compact footprint, helping free up worktop space. The stainless steel housing is suitable for professional kitchens and facilitates daily maintenance.
APPLICATIONS
Suitable for holding prepared side dishes, meat, vegetables and other components before plating. In hotels and buffets, it helps organise hot preparations between the kitchen and serving area. For catering and events, it provides a compact hot-holding reserve before dishes are served. Also suitable for canteens and institutional kitchens with continuous or high-volume service.
USE AND ORGANISATION
Preheat the appliance and load already-hot preparations into the GN 1/1 pans. Set the thermostat between 40 and 80 °C according to service requirements and use the water tray for humidification. Adjust the water level and temperature to the planned holding period according to the manufacturer's instructions. Organise preparations by drawer and open the required drawer when plating.
CLEANING AND MAINTENANCE
Allow the appliance to cool before cleaning its surfaces. Remove the GN 1/1 pans for easier cleaning and clean the water tray used for humidification. Maintain the stainless steel housing and components according to the manufacturer's instructions.
