Smoking – being cold – does not disperse upwards so it always remains in contact with the product evenly.
The cold smoking process also prevents the emergence of bacteria and the cooking of the product.
Smoke goes through a liquid.
The smoke will therefore not only be really cold (possibility to add ice to the chosen liquid) but will be enriched also by aromas taken from the liquid.
The liquid, in turn, will enrich itself with the aroma of smoke that passes through it, giving the chef the opportunity to reuse it for the creation of new fantastic recipes.
