Gastronomy - pastry - bakery ovens

Professional gastronomy, bakery and pastry ovens are commercial cooking appliances designed to bake and cook sweet and savoury products in foodservice businesses and food production facilities. Ideal for restaurants, hotels, delicatessens, bakeries, pastry shops, catering companies, canteens and commercial kitchens, they support the preparation of bread, focaccia, croissants, biscuits, cakes, baked goods, meat, fish, vegetables and prepared dishes, depending on the appliance.

The range includes professional convection ovens, fan-assisted ovens, combi steam ovens, electric and gas ovens, mechanical and digital commercial ovens in different capacities and configurations. Depending on the model, features may include chambers compatible with GN 1/1 Gastronorm trays or 600 x 400 mm bakery trays, fan circulation, reversing fans, direct steam injection, steam generators, core temperature probes, cooking programmes and automatic cleaning systems. Available functions and tray compatibility must be checked in the technical specifications.

When choosing a professional commercial oven for gastronomy, baking or pastry production, consider tray level quantity, tray format, spacing between runners, chamber capacity, power rating and operating temperature range. Energy supply, humidity controls, operating panels, dimensions and any water or drainage connections should also be assessed. Selection must match the intended preparations, production volume and installation requirements.
