GENERAL FEATURES
Combined oven for fresh and frozen bakery, pastries and sweet cooking processes; thanks to the AIR.PLUS technology it obtains uniformity of cooking in all points of the single tray and in all trays, and thanks to DRY.PLUS ensures the consistency of the cooked product, allowing to obtain a dry and well structured interior and a crispy and friable external surface.  
Air is the heat transmission tool and therefore the means to cook the product. The ventilation performance is therefore essential for obtaining uniform cooking on all points of the single sheet and on all the tops. This is why the study of air flows within the cooking room plays a key role in design.  
The AIR.Plus technology allows proper air distribution within each single baking tray, from the lowest one to the highest one without increasing cooking time.  
Thanks to AIR.Plus the food will have a homogeneous external coloring and their integrity and consistency will remain intact for many hours.
When cooking leavened products, the presence of moisture during the cooking phases can compromise the achievement of the desired result. The DRY.Plus technology allows to expel the wet air from the cooking chamber released by the baked products.
The DRY.Plus technology promotes the correct formation of the internal structure of the product ensuring a lasting consistency even many hours after the end of cooking.
