Humidity management
Climate cabinets can perform multiple functions including:
• cooling, heating, and maintenance• management and operation by reading temperature probes:evaporator, suction cell, relative humidity• function of cold/warm/maintenance/humidification/dehumidification/ozonization (optional)• you can perform complete and customizable cycles of stop/relief, seasoning, frolling. drying, freezing, precoating, storage at controlled temperature and humidity and in general cycles of food processing through temperature/ moisture/sanification air/ventilation• weighing system (optional) for seasoning, consisting of 2 load cells, range weight 2-18 kg, resolution of 2 grams
To ensure smooth operation of the system it is necessary to connect the internal control system
The control system can manage 3 main functions: warm, cold and maintenance. Each main function has different subfunctions and settings to control temperature, time, ventilation, air purity, humidity
On the home screen there are some programs created by the manufacturer, but the operator can create new ones to meet his needs by concatenating primary functions as he best believes.
It is possible to create programs to maintain controlled humidity, so as not to have decreased weight in some cases and in order not to proliferate molds in others, it is possible to create programs to thaw, sanitize foods and utensils, to transform certain foods thanks to primary and secondary functions such as yeast, drying, curing, etc.
Once enabled, the control system can interact with a web server in a bidirectional manner.
You can check and download all the data haccp, events and in addition display the monitor of the machine, its parameters and what it is doing in real time. In addition, an email address can send any alarm messages, stop machine etc. At a later level that is reserved to the technician/installer you can also change the parameters and remotely control the machine in all its main functions.
It is also possible by a dedicated area on web servers to draw on the recordings of the machine events and to be able to use them as a dialog with other management, logistic, quality software system that the operator uses.
The weighing system is of fundamental importance for the seasoning as the weight loss is the most significant criterion to indicate a good seasoning. With this option you can set the weight loss you want to achieve and the machine will be able to detect in real time the weight loss that happens during the phases of stewing and/or drying. The data collected is recorded and according to the parameters set the system is self-adjusted by increasing or decreasing relative humidity within the cell.
Ozone (optional) is one of the most powerful oxidants in the world able to keep the bacterial proliferation under control, so it is excellent to use it on meat/fish foliage or even in seasonings in mould control. Indispensable the use in medium/long-term foilings for the control of bacteria, mildew and allergens while maintaining the organoleptic properties to the treated product. The ozone generator is available in two versions, simple or with probe. The probe version is self-regulated without the need to dose ozone
